Yesterday was a great day for Cakes Come True. I won the Ocala Cupcake Wars 1st Place for the Best Taste in the Professional Division. The event was to raise money for the Victory Academy in Ocala. The turnout was more that expected and everyone loved the opportunity to see and taste the cakes from many bakers in our community.
The judges loved my Chocolate cupcake with Khalua syrup, dark chocolate ganache and Mocha Swiss Merengue Buttercream.

The day has arrived to deliver my finished Gingerbread Village to the Windsor of Ocala Assisted Living Facility for the Christmas celebration event. Although it took me a week to make it, I loved working on the houses and making the fondant figurines, especially the snowman!
The look of excitement on my grandson's face when he saw it was priceless! Immediately he wanted to eat it all up {he is 3 years old, so everything Grandmom makes must be for him!}
 To keep him from being disappointed, of course I placed several candies at the front and did not attach them so he could have his choice.

Gingerbread Houses

Well, Thanksgiving is over and it is time to prepare for Christmas. This week I am busy with making a gingerbread village to display at the Winsdor Oaks Senior Living Home in Ocala. Several cake bakers in our area are creating gingerbread houses to display for the tenants and visitors for the next 2 weeks. Since this was my first attempt at making a gingerbread house, I was quite intimidated until I actually got started. I will post pictures soon. It has turned into a challenging and enjoyable adventure. I have stayed up until midnight 2 nights this week because once I start, I can't seem to put it down! Hopefully you can stop by the Windsor and see the displays this season.

Oreo Truffle disaster!

Today I tried to make Oreo truffles from a recipe. In the past, I just put Oreos in the food processor and a little bit of cream cheese until it all come together.
Well, today I decided to actually look up a recipe for them....what a mistake! The recipe said to use 16 oz of Oreos and 8 oz of cream cheese. So I did... and it turned out to be a gooy, greasy mess.  In order to "fix" them enough to be able to roll into balls, I ended up adding another whole 16 oz pkg of Oreos.
They are in the freezer now, hoping that they firm up enough to dip in chocolate.Keep your fingers crossed:) 

Haloween cupcakes

Today I completed and delivered the most adorable Halloween cupcakes with fondant toppers. Thank you to David at CF for the order. I know you will enjoy them!

Great summertime recipe! Pink Lemonade Cupcakes

Thanks to Collen at cake artisan.com for a summertime cupcake recipe that is delicious!
Pink Lemonade Cupcakes
1 box Moist Cake Mix
3 Egg Whites
1/3 cup natural, unsweetened apple sauce
1&1/4 cup of water
3 heaping tablespoons of Country Time Pink Lemonade drink mix powder (not diluted)
1 tsp of Madagascar Vanilla or Vanilla Essence
1 tablespoon of fresh lemon zest
pink food coloring
 Combine all ingredients and bake at 350 degrees until a toothpick comes out clean. Usually around 19 minutes for cupcakes.

Great Charity Event!

We had a great night last night, spent several hours baking, filling and frosting 120 cupcakes for a benefit event for an employee at Centurylink.
Preorders sold out almost all of the cupcakes by the end of business today.
Flavors for the event are:
Chocolate with Raspberry filling and Ghirardelli chocolate icing
Vanilla Almond with Guava Cream filling and Almond Vanilla Bean icing
Red Velvet with Cream Cheese filling and Vanilla Bean Cream Cheese icing
